Atayef bi Ashta

This delectable Lebanese dessert consists of small pancakes stuffed with delicious Ashta, garnished with ground pistachios and sprinkled with Atr. Ashta is clogged cream with Orange Blossom Water and Rose Water. Atr is sugar syrup.

The best batter recipe that has worked for me is: Mix 1.5 cups of flours with 2 tsp of baking powder, 2 tbs sugar and 1.5 cups of water. I let it rest for 30 min then cook like mini-pancakes until bubbles form and the top becomes dry (do not turn it over).

To make the atr, I use equal amount of sugar and water for example 2 cups of each, add a tbsp of lemon juice. Boil over medium heat, stirring until it starts to thicken. Remove from heat and add Orange Blossom Water and Rose Water about 1 tbsp of each. Set aside to cool.
